Easy Chia Seed Pudding Recipe

Chia seed pudding is one of my staple breakfasts, high in fibre and a good source of omega 3 fatty acids it's often considered a 'superfood' due to it's incredibly high nutrition content. It's super filling as well so I know when I eat this in the morning, it helps keep me full for longer. It's also extremely easy to make.
Some people don't like the consistency of chia seeds but I don't mind it. My favourite part about it is the creaminess the coconut milk provides and the sweetness makes it feel like a dessert and breakfast in one. Top it with your favourite flavours for an extra punch!
This taste so delicious, sweet and creamy - trust me you're going to love it!
Ingredients
+ 150ml full fat canned coconut milk
+ 100ml water
+ 4 level tbsp chia seeds
+ 1 tbsp liquid sweetener (agave, maple, honey)
Optional
+ 1 tbsp cacao powder for chocolate flavour
(or carob powder for a low histamine alternative)
+ 1 tbsp protein powder
Instructions
~ Add all of the ingredients to a glass
~ Stir regularly every few minutes
~ After 15 minutes place in the fridge overnight
~ Take out the next morning
~ Top with your favourite granola and fruit
~ Enjoy!
